While the folks at DCViews consider it a gimmick setting, I found my PowerShot G9's Color Accent mode to be a pretty fun tool (and I don't have to invest in (or even know how to use) PhotoShop to achieve this effect).
This was taken while dining in Philadelphia's Chinatown on President's Day.
